Is it possible to select more directories here? Otherwise what's the purpose of
with-extra-byte?

Not currently, no.

I plan to land new fuzzers shortly that use the extra byte; since the corpus CL
is kind of messy I put them all together, but if you think it's nicer I can move
the -extra-byte ones to that CL.
